It’s Day 5 of the 12 Days of Christmas series on the blog- and 9 days left until Christmas. I have no idea how this has happened. The only ‘negative’ aspect of Christmas for me is that it’s over way too soon. And then after that, there’s just January….and the long endless winter.

So let’s not think about that right now. Let’s focus on something else.

I’ve never had the opportunity to host a holiday party. For one thing, I live in an apartment which isn’t the ideal amount of space for something like that. For another, I’m an introvert- so my guest list for a party would be almost laughably small. But that’s only the reality of the situation. If I were speaking in ideal hypotheticals, the situation would be completely different.

In an ideal, hypothetical situation I would live in a beautiful, spacious house with a huge kitchen and adjoining dining room with a long table for lots of guests. And not just any guests either. For my ideal Christmas party, I’d have a specific list of VIPs that I would both love to hang out with and love to cook for:

1. President Barack Obama & his wife, Michelle- this one’s a no brainer. Who wouldn’t love to cook for the leader of their country? Plus there’s just a lot of questions I’d love to pick his and her brains over.

2. Pastor Joseph Prince- Joseph Prince is a pastor from a mega-church in Singapore; I adore his ministry and message and try to buy everything of his that I can get my hands on. He has a fresh, empowering perspective of the Christian faith that is truly inspiring. He’d be a great guest to have at my Christmas party to talk with, as well as have the honor to feed.

3. Sunny Anderson- Sunny is a famous Food Network personality. I LOVE her style of cooking; it’s delicious but not too fancy at the same time, so I wouldn’t be intimidated to have her eat my food. And if something did happen to ‘go wrong’ in the kitchen, she could be there to step in and save the day if need be. Plus, her name really does seem to match her disposition so I think she’d bring a lot of life to a dinner party.

4. Robert Downey Jr.- Number one: he’s eye candy. But number two, he also has a really wry sense of humor that I just love. Everything that comes out of this guy’s mouth is really witty and I have a serious weakness for men that can make me laugh. Playing a game of Charades in a group with RDJ would pretty much be the highlight of a Christmas party, I’m pretty sure.

5. Steve Carrell (as Michael Scott from “The Office”)- I’m really not sure how I would pull this one off. Maybe in an ideal situation I could offer Steve a specific amount of money to stay in character for the whole night, but I know for sure that hosting a party with Michael Scott would truly be an unforgettably awesome (however crazy) experience.

6. Tina Fey & Amy Poehler- Again, this for obvious humor purposes. And, they have to come together as a package deal. No compromise on that.

7. Dianne Reeves- Dianne is one of my all time favorite jazz vocalists. Her voice is like liquid gold in my ears; she would provide the perfect entertainment for the party.

8. Harry Connick Jr.-Eye candy. To the nth degree. Add to all that his flawless voice, and he’s a shoe in for the party. He and Dianne serenading the party with “The Christmas Song” would bring the house down.

9. General Colin Powell-  Although his political choices didn’t always agree with mine, I will still always have a great deal of respect for this man. His impressive, extensive military service record alone makes him a guest that would be an honor to serve a Christmas dinner to, but I also think he’d be a great guy to have a conversation with about life in general (no pun intended).

10. Angelina Jolie- There’s really no deep, meaningful reason for why I would invite her to a Christmas party. For some reason, I’ve just always really liked her. Apart from being a phenomenal actress, I think she’s someone I’d get along with and could hold a pretty long conversation with about things. And I suppose she could bring Brad and their kids too.

I’d definitely have multiple desserts at what would now be a very crowded Christmas party, and this ‘pie’ would certainly be one of them. As you can probably tell, it isn’t a pie in the classic sense of what most of us identify with as pie. But it’s also not really a cake either. Here’s the thing: while it’s baking, the bottom and edges become browned and chewy to the point of forming a crunchy kind of ‘crust’ that contrasts perfectly with the soft and moist center. The cranberries give it a tartness that is well balanced with the sweetness of the sugar and almond extract. Add to that the fact that this dessert takes literally about 5 minutes to put together, and you’ve got a real winner on your hands here.

Ingredients

  • 1 cup all purpose flour
  • 1 cup white sugar
  • 1/4 tsp. salt
  • 2 cups fresh cranberries
  • 1/2 cup chopped walnuts
  • 1/2 cup (1 stick) butter, melted
  • 2 eggs, beaten
  • 1 tsp. almond extract

Directions

1. Preheat oven to 350 degrees F . Grease one 9 inch pie pan.

2. Combine the flour, sugar, and salt. Stir in the cranberries and the walnuts, and toss to coat. Stir in the butter, beaten eggs, and almond extract. Spread the batter into the prepared pan.

3. Bake at 350 degrees F for 40 minutes, or until a wooden pick inserted near the center comes out clean.

It’s Day 3 of the 12 Days of Christmas on the blog; I’m sitting listening to my Christmas playlist as I write this post and it’s making me think of a question I’ve wondered about for a while now:

Why is Rodgers and Hammerstein’s “My Favorite Things” considered a Christmas song/carol?

It’s not that I don’t like it. The Sound of Music is a pretty good musical and I’m a fan of the song in general..but I really doubt the writers were thinking of the Holiday as inspiration when they were putting it together.

My more sentimental, sappy side assumes that because Christmastime is the best time of year, My Favorite Things is generally associated with it because at the very best time of year you start thinking about all of the things that you love the most.

Although I can’t think why the thoughts of “wild geese that fly with the moon on their wings” would suddenly make anyone feel better. Personally geese, ducks and the like freak me out. That could be because the geese and ducks on my university campus always chase people because over the years they’ve become too accustomed to parents taking their kids to the riverside to feed them bread. Therefore, they now think that all humans have a loaf of bread hidden somewhere on their person; they’ll chase you until you ‘give it up’. So yeah, geese are not one of my favorite things.

I’m thinking that Rodgers and Hammerstein just needed a word that rhymed with “things”, and that line is the best they could come up with.

But whether they meant the song for Christmas or not, it DOES make you think of your favorite things. Heck, I’m starting to do it now. Maria von Trapp had nine, so I guess I can give nine of mine too:

Pancakes with slightly crisp edges doused in maple syrup.

Quiet mornings when the sky is bluish gray, but it’s not raining.

The A & E Pride and Prejudice movie.

Michigan State University football.

Binge watching  Netflix.

Chris Hemsworth’s arms. And abs. And pecs. Basically his ‘everything’ (so that still should count as one, right?).

That’s nine, right? I notice that none of it rhymed with the word ‘things’. Gosh, now I’m starting to understand the inclusion of the whole “wild geese that fly with the moon on their wings” line. Song writing’s not all that easy.

Oh well. Moving on.

I made two popcorn balls for the series, the first of which was these Honey Roasted Peanut Popcorn Balls. The second was this recipe; I saw it in a Christmas issue of Food Network magazine a year or so ago and had it pegged for such an occasion as this. After I made my Champurrado (Mexican Hot Chocolate) a few weeks ago, I remembered that I had this clipping in my recipe box and immediately decided to try it out for the 12 Days of Christmas.

Guys… Chocolate. Marshmallows. Cinnamon sugar. The popcorn balls are doused and dipped in all of these, resulting in one of the yummiest, addictive treats I’ve ever made for Christmas. It’s sweet. It’s gooey. It’s chewy. It’s everything.

C’mon, just look at that sugary crust on the top: isn’t it just making you salivate?

Mexican Chocolate Popcorn Balls

Ingredients

  • 12 cups fresh popcorn (preferably made over the stove)
  • 1/4 cup light corn syrup
  • 2 tbsp. butter, plus 2-3 tbsp. extra for buttering your hands
  • 1 cup confectioner’s sugar
  • 1 cup mini marshmallows
  • 2 tbsp. unsweetened cocoa powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp. water
  • 1 tsp vanilla extract
  • Pinch of salt

 Directions

1. Bring corn syrup, butter, confectioners’ sugar. mini marshmallows, unsweetened cocoa powder, cinnamon, nutmeg and water to a boil in a large pot over medium heat, stirring.

2. Add 1 teaspoon vanilla and a pinch of salt.

3. Remove from the heat; using a rubber spatula, stir in 12 cups popcorn and 1 more cup mini marshmallows.

4. Butter your hands, then shape into balls and roll in cinnamon sugar, working quickly before balls cool off. Place finished balls on parchment paper lined baking racks to set.

Happy Easter everyone! I’m a Christian, so today I’m celebrating Resurrection Sunday (Jesus Christ’s resurrection), but if you’re not a Christian and just celebrate ‘Easter Bunny Easter’, or if you’re a Jewish and celebrating Passover, then I wish you a happy holiday with your friends and family. True to Cooking is My Sport fashion, I’m sharing some trivia with you guys:

  1.  The name, “Easter” comes from a goddess: Her name is Eostre and She was the Mother Goddess of the Saxons of Northern Europe. She was, according to Grimm (yes, one of those Grimms), “goddess of the growing light of spring.” 
  2. Hot cross buns come from the wheat cakes that were baked in honor of Eostre. As part of the adoption of traditions, Christians added the cross on the top and had the cakes blessed by the Church. In England, it was believed that hanging a hot cross bun in the house would protect it from fire and bring good luck for the coming year.
  3.  Easter eggs once acted as birth certificates. During the 19th century, when many families were unable to get to the closest town hall to file a birth certificate, an egg would be accepted as a method of identification. The egg would be dyed and inscribed with the person’s name and birth date. It was completely legal and accepted by courts and other authorities

Besides the Easter holiday, today also  marks the final day of the Challah bread series we’ve been doing this week. You guys finally get to find out what I did with the three loaves of braided Traditional Challah and the Vanilla Bean Challah that I made (y’know, besides just eat it warm and slathered with butter). This time, instead of finding another way of doing Challah, I wanted to use it as a main ingredient in another dish. I went with a recipe that my twin sister has been asking me to make for a while now that she saw on the Food Network.

I love this recipe for so many reasons- not least of which is how awesome it tastes, which I’ll get to in a minute. What I really liked about it was that it let find a use for the ‘end’ pieces of the challah loaves. Don’t look at me like that. I know I’m not the only one that usually ends up throwing them out. Let’s face it: no one really wants them-until now that is. At first I was concerned that only 9 slices of bread wouldn’t be enough to make a substantial casserole. I was also worried that they would be overly soaked and ultimately soggy from the egg custard.  Fortunately, I was surprised. The bread puffed up really well when baked. Challah’s a pretty sturdy bread, so it was more than able to stand up to the egg mixture. I will say this though: if you’re using plain old Texas Toast bread, then I would think about bumping it up maybe two or three slices, as it’s much softer than Challah. It also doesn’t taste near as good, but you guys knew that already, right?

Okay, now to the good part: what does it taste like? Well first of all, what really (and I mean REALLY) sets this dish apart from any normal overnight French Toast Bake is the Coconut Almond Crust that’s baked on top of it. It’s like a crunchy, sugary almost candied carmelized effect that is doubly awesome when contrasted with the soft texture of the baked challah. If you’re not entirely convinced, then let me say up front that I’m not even a fan of coconut at all. I don’t care for the texture or overall flavor…and I STILL couldn’t imagine eating this dish without the coconut almond crust. It’s that good.

As you can see, I sprinkled powdered sugar on top of mine and added some berries and syrup, but my mom and sister said that they thought it was good enough to eat all on its own. If you’re looking for an easy dish to make for breakfast or brunch guests that will still knock their socks off, this is the one to try. Or maybe you’re like me and baked a crap load of Challah or other sturdy bread that you have to do something with to avoid letting it spoil. Make this. You won’t regret it.

And I guess that does it for the Challah Series. Until I find another one to try. Then it’ll probably get a reboot. Don’t put it past me.

Ingredients

  • Unsalted butter, for greasing dish
  • 9 slices Texas Toast or other thick-sliced bread
  • 6 large eggs
  • 3 1/2 cups half-and-half
  • 5 tablespoons granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

         Coconut-Almond Crust:

  • 1/2 cup plus 3 tablespoons sweetened coconut flakes
  • 1/3 cup plus 1/4 cup sliced almonds
  • 5 tablespoons granulated sugar
  • 5 tablespoons all-purpose flour
  • Pinch salt
  • 6 tablespoons unsalted butter, softened
  • 1 large egg plus 1 large egg yolk

Directions

1. Preheat the oven to 300°. Lightly butter a 9-by-13-inch casserole dish.

2. For the French toast: Lay the bread slices in one layer (it’s OK if they overlap a little) on a baking sheet. Bake the slices (to dry them out a little) for 6 minutes, then flip and bake for 6 minutes more. Set aside to cool.

3. Whisk together the eggs, half-and-half, granulated sugar, vanilla, cinnamon and salt in a large bowl. Dunk each bread slice in the egg mixture to coat thoroughly and shingle the slices in the buttered casserole dish. Pour any remaining egg mixture over the bread. Cover the dish with plastic wrap and refrigerate for at least 6 hours or overnight.

4. For the coconut-almond crust: Put 1/2 cup of the coconut, 1/3 cup of the almonds, granulated sugar, flour and salt in a food processor and process until very fine. Add the butter, egg and egg yolk and process well to form a smooth paste.

5. To assemble the casserole: Preheat the oven to 350°. Spread the coconut-almond mixture evenly over the soaked bread slices. Top with the remaining 1/4 cup sliced almonds and 3 tablespoons coconut and bake until puffed and lightly golden and the custard is set (the center of the casserole will no longer jiggle when shaken), 45 to 50 minutes.

6. Allow to cool for 1 hour before serving, or serve at room temperature. Serve with a sprinkling of powdered sugar and berries if using.

12 Days of Christmas {Treats}

Three days til Christmas! Can you guys believe it? I don’t know where this entire year went, much less December. I swear it was just yesterday that I was sharing my Thanksgiving recipes with you guys. Only six more random Christmas facts to share, here’s three of them for now:

  1. 1 in 10 – The number of the presents received that will be broken by the New Year. (To be honest I would have thought that number would be higher.)
  2. Coca Cola was the first beverage company to use Santa for a winter promotion. (Anyone remember the old Coca Cola commercials with Santa and the polar bear from the 90s? I miss those.)
  3. 7 in 10 – The number of dogs that get Christmas gifts from their owner. (I’m not surprised at this one at all. I don’t have a dog -or a pet, period- but from what I hear it’s just like having another pet.)

This is another recipe that I’ve been curious about since I was little. The cookbook I got it from is my mom’s and was first released in 1997- just to give you an idea of how old it is. Sugar cookies are my all time favorite cookie to eat. This recipe uses them when crushed up as a large substitute for flour. I thought it sounded good then, and I still thought it sounded good now. But unlike in 1997, I’m now old enough to actually use a stove on my own, so I thought that I would make it this year and put it in the series of Christmas Treats.

All of my fellow foodies out there are probably wondering why this is called a torte and not just a cake. Maybe some of you out there are wondering what the difference is supposed to be between them in the first place. Then maybe some of you just don’t care. Whichever group you’re in, I’ll give an explanation anyway.

If you want to be general about it, tortes are a kind of cake. The word ‘torte’ is German for the word ‘cake’ in fact. So if you’re a fan of cake, then chances are you’ll like tortes too. Now if you want to be technical about it, tortes do usually have a few significant changes in the ingredients. The flour is usually replaced by some kind of ground up nuts or breadcrumbs, which gives it a heavier texture. There’s no baking soda or baking powder in the dry ingredients, so they usually don’t rise very high either. They’re also typically decorated with some kind of fruit, cream or custard filling that helps to balance out the heaviness of the torte.

This torte turned out somewhat different from the ‘conventional’ way. In the first place, even though there aren’t any baking soda or baking powder and very little flour, it still rose pretty high. My only guess would be that it was the 6 eggs that gave it an extra ‘lift’. There’s also no filling in it, though I don’t think that it’s necessary in this case. This torte is more than yummy enough to stand on its own. Although I do think this would taste pretty good warmed up and topped with some whipped cream or cool whip and strawberries with a Vanilla latte on the side. I think this recipe was well worth the wait- give it a shot, and I’m pretty sure you will too.

Christmas Carol Movies

Rather than try to give a recommendation for each of these movies, I thought I’d just throw them all together in one post and suggest you just set aside a few hours in the next 3 days to just try and watch them all together in A Christmas Carol marathon…Like I’m doing today.

So let’s recap: you guys have now got Mickey Mouse, the Muppets, Jim Carrey and Vanessa Williams giving you their version of Charles Dicken’s classic, as well as this recipe for a sugar cookie torte. Thank me later: for now, just get baking and watching.

Ingredients

  • 2 cups slivered almonds, toasted
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 6 large eggs
  • 2 (5 1/4 ounce) packages of sugar cookies, finely crushed (3 cups)
  • 1/2 cup all purpose flour
  • 1/3 cup half-and-half
  • 1 1/2 tablespoons vanilla extract
  • Powdered sugar (optional)

 Directions

1. Draw a 10’ circle on a piece of wax paper, using a 10” tube pan as a guide. Cut out a circle. Set tube pan insert in center of circle. Grease bottom of pan, and line with wax paper cutout; heavily grease and flour wax paper and sides of pan. Set aside.

2. Position knife blade in food processor bowl; add almonds. Pulse 4-6 times or until almonds are coarsely ground. (Be careful not to overprocess, as this releases oil from the almonds).

3. Beat butter at medium speed of an electric mixer until creamy;; gradually add 2 cups sugar, beating well. Add eggs, one at a time, beating after each addition.

4. Combine cookie crumbs and flour; add to butter mixture alternately with half-and-half, beginning and ending with crumb mixture. Beat at low speed just until blended after each addition. Stir in almonds and vanilla.

5. Spoon batter into prepared pan. (Batter will fill pan only half full). Bake at 300° for 1 hour and 40 minutes or until a wooden pick inserted in center comes out clean. (Torte only rises slightly). Let cool completely in pan on a wire pack.

6. Run a sharp knife around edge of pan to loosen torte. Carefully invert torte onto a serving plate; peel off wax paper. Invert torte again. Sift powdered sugar over torte, if desired.

12 Days of Christmas {Treats}

I thought I’d kick off this post with some random facts about Christmas that you may or may not have known before:

  1. The common abbreviation of Christmas to “Xmas” is derived from the Greek alphabet. “Chi,” the first letter of Christ’s name in the Greek alphabet, is written as “X.” (So I guess all the ‘War on Christmas’ propoganda is a bunch of bologna. Go figure).
  2. The earliest known Christmas tree decorations were apples. (We actually had fake apple ornaments on the Christmas tree from my childhood. I never quite understood why until now).
  3. The most expensively dressed Christmas tree was valued at $11,026,900 and was displayed by the Emirates Palace in the United Arab Emirates last year. (That tree better be trimmed in “decorations from Tiffany’s” as  the song goes, that’s for sure.)

I’ll give you guys some more trivia throughout the series, but for now let’s get down to treats. For the second day of our Christmas treat series, I wanted to try something new that I’ve never tried before, both in the kitchen and in general. Biscotti were something that I’ve heard of but never really thought I would care for. They’re essentially twice baked cookies that are meant to be dunked into coffee to make them soft enough to bite into, as the traditional Italian style ones are quite hard. The thought of jaw-breaker cookies was never very appetizing to me, so I never bought any that I would see at Starbucks. Interestingly enough, when I was brainstorming ideas for the series, biscotti came to my mind. I tried to ignore it, but it just kept coming up.

You guys know me by now. Once I get an ‘itch’ to cook a new recipe, I’m gonna follow through with it. There are a TON of biscotti recipes online, but eventually I settled on this one for two reasons: #1, it’s supposed to be an ‘American’ biscotti which means that it won’t chip a tooth when you take a bite out of it without coffee, and #2, it’s a vanilla biscotti- and I love ANYTHING that’s vanilla flavored.

They looked pretty good on their own when they finished their second round in the oven, but I went ahead and threw together a basic powdered sugar icing that I flavored with milk and vanilla extract, then topped them with red and green sprinkles. I think it makes them look so much more festive and ‘Christmas-ey’, don’t you think?

Today’s Christmas album recommendation is for A Special Christmas by SWV- or, the Sisters with Voices. Anyone who was or still is a fan of the old school R & B from the 90’s (like me) is going to be a huge SWV fan. Their songs just never seem to get old, and their Christmas album is no exception. They give a smooth rendition to the traditional Christmas carols that are very reminiscent of 90’s music. It’s been apart of my must-haves Christmas collection for years now. It definitely should be apart of yours too.

Vanilla Biscotti

Ingredients

Directions

1.  Preheat the oven to 350°F. Lightly grease (or line with parchment) one large (about 18″ x 13″) baking sheet.

2. In a medium-sized bowl, beat the butter, sugar, salt, vanilla, almond extract (if you’re using it), and baking powder until the mixture is smooth and creamy.

3. Beat in the eggs; the batter may look slightly curdled. At low speed of your mixer, add the flour, stirring until smooth; the dough will be sticky.

4. Plop the dough onto the prepared baking sheet. Divide it in half, and shape it into two 9 1/2″ x 2″ logs, about 3/4″ tall. Straighten the logs, and smooth their tops and sides; a wet spatula or wet bowl scraper works well here. Sprinkle with coarse white sparkling sugar, if desired, pressing it in gently.

5. Bake the dough for 25 minutes. Remove it from the oven.

6. Using a spray bottle filled with room-temperature water, lightly but thoroughly spritz the logs, making sure to cover the sides as well as the top. Softening the crust just this little bit will make slicing the biscotti much easier. Reduce the oven temperature to 325°F.

7. Wait 5 minutes, then use a sharp chef’s knife or serrated knife to cut the log crosswise into 1/2″ to 3/4″ slices. Or cut the biscotti on the diagonal, for fewer, longer biscotti. As you’re slicing, be sure to cut straight up and down, perpendicular to the pan; if you cut unevenly, biscotti may be thicker at the top than the bottom, and they’ll topple over during their second bake.

8. Set the biscotti on edge on the prepared baking sheet. Return the biscotti to the oven, and bake them for 25 to 30 minutes, until they feel very dry and are beginning to turn golden. They’ll still feel a tiny bit moist in the very center, if you break off a piece; but they’ll continue to dry out as they cool.

9. Remove the biscotti from the oven, and transfer them to a rack to cool. Store airtight at room temperature; they’ll stay good for weeks.
